Lisa Marie’s Vegan Banana Bread French Toast Recipe
Adapted from AllRecipe.com’s Banana Crumb Muffins
To make the Banana Bread:
Ingredients
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup almonds, coarsely chopped
- 3 bananas, mashed
- 1/2 cup sugar
- 1 egg replacer (I used Ener-G Egg Replacer)
- 1/3 cup Earth Balance, melted
Topping Ingredients
- 1/3 cup sugar
- 1 teaspoon molasses
- 2 tablespoons all-purpose flour
- 1/8 teaspoon ground cinnamon
- 1 tablespoon Earth Balance
Directions
Preheat oven to 350 degrees F. Lightly spray a 4 1/2 x 9 inch loaf pan with non-stick spray. Lightly dust with flour. Set aside.
In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder, salt and almonds. In another bowl, beat together bananas, sugar, egg replacer and Earth Balance. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared loaf pan.
Combine the 1/3 cup sugar and molasses. Using a fork mix the two until there are no more chunks of molasses left.
In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon of Earth Balance until mixture resembles coarse cornmeal. Sprinkle topping over batter. Bake in preheated oven for 40-50 minutes, until a toothpick inserted into center comes out clean. Be sure to check on it at about the 40 minute mark. You don't want the topping to burn.
Allow loaf to cool completely before slicing.
Banana Bread French Toast
Ingredients
- A few slices of banana bread, you may want to slice them somewhat thick so that they won't fall apart
- 1 cup regular almond milk
- 2 tablespoons all-purpose flour
- 1 tablespoon maple sugar (or regular sugar if you don't have maple sugar)
- Oil for cooking
Directions
Whisk together the almond milk, flour and sugar. Dip the banana bread slices in milk mixture and coat both sides. Place in lightly oiled pan and cook on medium heat until both sides are golden brown. Serve immediately. You can dress this up any way you like. It tastes extra special with some caramel sauce drizzled over the top along with some chopped almonds and confectioners' sugar. Or enjoy it the same as you would regular French toast. With some warm maple syrup!
